2. Rosemary-Infused Hot Cocoa

Ingredients:

  • 6 cups whole milk (or a creamy alternative like oat milk)
  • 1 cup high-quality unsweetened cocoa powder
  • 3/4 cup granulated sugar (or to taste)
  • 1/2 cup bittersweet chocolate chips
  • 2 fresh rosemary sprigs, plus more for garnish
  • 1 teaspoon vanilla extract
  • A pinch of salt

Preparation:
In a saucepan, gently heat the milk with the two rosemary sprigs over medium-low heat until it begins to steam. Do not let it boil. Remove from heat, cover, and let the rosemary infuse for 15–20 minutes. Remove and discard the sprigs.

Return the rosemary-infused milk to the saucepan. Whisk in the cocoa powder, sugar, and salt until smooth. Add the chocolate chips and continue to whisk over low heat until the chocolate is completely melted and the mixture is smooth and velvety. Stir in the vanilla extract. This can be kept warm in a slow cooker or a thermal carafe.

3. Vanilla Bean Steamers

Vanilla steamers are as relaxing as they sound—simple, cozy, and a touch fancy without even trying. This is a great go-to when you want something warm but not too rich or caffeinated, and using a real vanilla bean makes the whole thing extra fragrant and special.

Ingredients:

  • 6 cups whole milk
  • 1 vanilla bean, split lengthwise
  • 1/4 cup pure maple syrup or honey (or to taste)
  • Whipped cream and a dusting of nutmeg for serving

Preparation:
Pour the milk into a saucepan. Scrape the seeds from the inside of the split vanilla bean and add both the seeds and the pod to the milk. Add the maple syrup or honey. Warm the mixture gently over medium-low heat until it is hot and steaming. Avoid boiling. Let it steep for about 10 minutes to allow the vanilla flavor to fully develop. Remove the vanilla pod before serving. For a frothy finish, you can use a milk frother or an immersion blender just before ladling it into mugs.
