Have you ever picked up a box of muffin mix from the grocery store? Maybe you wanted the taste of home baked muffins, or maybe it was the convenience. Hey, maybe it was both.
Here's a way to get home baked muffins with ingredients you can pronounce while also getting that same boxed convenience.
There is one catch.
This mix is so easy to make, and you'll have to put together the first batch, but after that it's easy, convenient, and sooo good. And the best part is that these are basic muffins, so you can add your own additions to them to create variants.
So let's get to it.
Basic Muffin Mix
4 cups unbleached white flour and 4 cups whole wheat flour
OR
8 cups unbleached white flour
2-1/2 cups raw sugar
1/2 cup powdered whole milk (non fat can be substituted for lower fat content)
1 tsp sea salt
1/3 cup baking powder
Mix all of these ingredients together and store in an air tight container. The mix can also be frozen in a freezer bag for up to three months.
To Prepare the Mix
Combine
3-1/2 cups of Basic Muffin Mix
2 cups water
1/2 cup oil (corn, vegetable, safflower)
1 egg
Mix all ingredients with a whisk until well blended, but do not beat the mixture. Once blended, add your choice of 1 cup chocolate chips, blueberries, strawberries or your favorite add in.
Bake on 350 for about 15 to 20 minutes or until a toothpick comes out clean.
With these muffins, you get to boast that you baked them from scratch, but you still get the convenience of a mix.
